Taleggio D.O.P. is a medium seasoning, soft paste and washed rind. 
Its history is closely linked to the Val Taleggio, from which it takes its name, but over time its production has expanded into a very large territory that includes a large part of Lombardy, Piedmont and the province of Treviso, in the Veneto region. 
 
Vaccine product, washed rind, because it undergoes a treatment, during the seasoning, which provides sponging of water and salt. Aromatic intensity and medium high odors.
